I was surprised at the weight of this pan; I have been a devotee of “Calaphon” for over 20 years. I am starting to convert to stainless little by little. I have some Cuisinart that is also very good, but I like this better. This pan is very well made and should last for a lifetime. Read more.. | |

I made my first batch of stock a few days ago using my new Sitram stockpot. I began by browning the chicken parts and onions in the stockpot on my induction cooktop, and can report that the Sitram pot performed admirably, distributing heat evenly throughout its base, and permitting an even and well-controlled browning of the food. This is a large (11″ diameter) saute pan that will brown and evenly cook almost anything you can get in it. It is a very heavy (a desirable attribute) pan. So, if you plan to toss your food while sauteing, you’ll need both hands.
